I know I am not a food blogger nor a nutritionist. However, I do know that avoiding carbs at night isn’t the worst idea.
Alongside seeing other bloggers do this and countless websites giving you advice on how to cook with cauliflower, this recipe has me addicted!!
I could eat it every other night if Jeisson allowed me. I’m not sure what gives it such a yummy flavor given the ingredients are pretty minimal. I don’t question it though.
Here is the list of what you’ll need based on a meal for two people and leftovers (obvi)
2 cauliflower heads
chicken
salt, pepper, & olive oil
Vodka or Spaghetti Sauce (whichever you prefer, I use Vodka sauce)
1. Preheat oven to 450 degrees while you break up cauliflower into smaller pieces
2. Add olive oil, salt, and pepper onto cauliflower. Bake for 20-25 minutes. Side note, I like just a hint of “burnt” on my cauliflower…call me weird, it’s fine
3. In a pan, I just cook my chicken with salt and pepper for flavoring. Once done to liking, cut chicken up to either small pieces or however you want it in the pasta
Once the cauliflower is done, throw the sauce and chicken on top and that is it!!
I must admit, after working, blogging, and gym, I prefer meals that require no thought process if I’m not in the mood to cook.
I promise you though, you have to try this. I’m going to get a new pan this weekend then its time to try cauliflower mac and cheese!!
It is going to rain in WI all weekend and after the festivities from last weekend…I feel this will be a nice and relaxing weekend!
